The pressing

Pressing takes place from october to mid-december.

It's one of the highlights of the year. Every autumn, our suppliers make several trips to deliver their harvest. The apples are put on hold in a storage area in order to reach their optimum maturity before being pressed.
About 20 tons of apples are being selected, washed and pressed each day.
